What's Cookin?

I’m going camping this weekend with the kids down at the property. So we will be cooking over the campfire on Friday and Saturday nights. Sunday is still open since we may just stop and eat in town on the way home.

Monday: flounder fillets, corn dodgers, garden veggies
Tuesday: cheesy chicken carbonara w/ Fettuccini
Wednesday: Hamburger helper with mixed veggies
Thursday: pork and veggie kabobs, rice pilaf
Friday: marinated grilled chicken, veggies packs on the fire, bread
Saturday: brats, chips, fruit
Sunday: open – possibly eating out.

As usual if you want a recipe just ask.

  1. At the risk of sounding like a complete idiot, how do you put together a veggie pack and cook it over the fire? This sounds like something I would like to do!

  2. Oh this is a really cool way to cook over a camp file. Take some aluminium foil and place your veggies (you can use chicken or fish with this as well) in the foil with a little butter or oil and your seasonings. Fold up the foil so that it seals the juices in and place in the hot coals. Fish only takes about 10 min (put your veggies in a seperate foil as they cook longer), Chicken takes somewhere betweein 20 - 30 depending on how thick it's sliced. I like to use tenderloins and slice them thinly so they don't take so long.

    Of course, carrots and potatoes are going to take the longest but if you precook them a bit beforehand, you can easily put them in with brocolli, squash, zucinni and other softer veggies.

    I'm going to cook my chicken seperately over the fire (like hot dogs) this time becuase I want to marinate it in italian dressing first. It takes longer than hot dogs but we have long sticks! :)

  3. LOL, A corn dodger is like hush puppies. I'd been reading about Jamie and Claire eating them and they just sounded good!
